1、鸡块沾上一层面粉后,要放在干燥的碟中,不可用生粉,否则鸡块油炸时不容易分开。&|/pwTI

2、鸡块的大小要一致,尽量剁成小块,以免油炸时不易炸匀炸透;由于鸡块的份量多,要分三次下锅炸,以免粘连成团。
