1、福寿鱼,又叫罗非鱼、非洲鲫,选购时以一斤左右为最佳,过大过重的福寿鱼肉质粗糙,土腥味也较重。

2、煎鱼的油要烧热,应先将一面煎至微黄再翻面,过于心急给鱼翻身,鱼皮很容易粘锅脱落。[;V

3、煎好的鱼要回锅焖煮一下,要不时将汤汁淋在鱼身上,使其更容易入味。t^#h!Q]I|m d A+V!C
4、应先将煮好的鱼盛起,再给汤汁勾芡,直接淋生粉水,既不容易翻搅成芡汁,又会将鱼身弄碎。IC Jx~
5、调糖醋汁时,应边试味边下调料,调至其酸甜适口便可收手。P

糖醋汁很难掌握,做不好啦不是甜啦就是酸,不知楼主用的什么醋

我做都是用炒糖色来做的,然后加入醋来炖,出来的味道很不错的也
